How to Make Traditional Korean Kimbap

Kimbap (also spelled gimbap) is a beloved Korean dish that is perfect for picnics, lunches, and as a quick and healthy snack. This delicious roll is made of rice and various fillings wrapped in seaweed. Follow this step-by-step guide to make your own traditional Korean kimbap at home!


Ingredients:
- 4 sheets of seaweed (gim/nori)
- 2 cups of cooked short-grain rice
- 2 tablespoons of sesame oil
- 1 tablespoon of sesame seeds
- 1 teaspoon of salt
- 1 large carrot, julienned
- 1 cucumber, julienned
- 2 eggs
- 4-5 imitation crab sticks or fish cakes
- Pickled radish (danmuji), cut into strips
- Spinach, blanched and seasoned with salt and sesame oil

Instructions:

1.Prepare the Rice:
   - Cook the short-grain rice according to the package instructions. Once cooked, let it cool slightly.
   - In a large bowl, mix the rice with sesame oil, sesame seeds, and salt. Set aside.

2. Prepare the Fillings:
   - Carrot: In a pan, lightly sauté the julienned carrots until they are tender but still crisp. Set aside.
   - Cucumber: Julienne the cucumber and set aside.
   - Eggs: Beat the eggs and cook them in a pan like an omelette. Once cooked, cut into long strips.
   - Crab Sticks/Fish Cakes: If using imitation crab sticks, cut them in half lengthwise. If using fish cakes, slice them into thin strips.
   -Spinach: Blanch the spinach in boiling water for a minute, then rinse with cold water. Squeeze out the excess water and season with a bit of salt and sesame oil.
   - Pickled Radish: Cut the pickled radish into long strips.

3. Assemble the Kimbap:
   - Place a sheet of seaweed on a bamboo mat (shiny side down).
   - Spread a thin, even layer of rice over the seaweed, leaving about 2 inches at the top edge uncovered.
   - Arrange a small portion of each filling horizontally across the rice, about 2 inches from the bottom edge.

4. Roll the Kimbap:
   - Using the bamboo mat, carefully lift the bottom edge of the seaweed and rice over the fillings.
   - Continue to roll tightly, using the mat to press and shape the roll.
   - Wet the uncovered edge of the seaweed with a bit of water to seal the roll.

5. Slice and Serve:
   - Use a sharp knife to cut the roll into bite-sized pieces. Wipe the knife with a damp cloth between cuts to keep it clean and prevent sticking.
   - Arrange the kimbap pieces on a plate and serve with soy sauce or wasabi if desired.
