Budae Jjigae, also known as Korean Army Stew, is a beloved fusion dish that emerged after the Korean War. It combines traditional Korean flavors with American ingredients, resulting in a hearty and spicy stew that's perfect for sharing. Here's how you can make this delicious dish at home!

 

Ingredients:

Broth:

- 4 cups of water or anchovy stock
- 2 tablespoons of Korean soybean paste (doenjang)
- 2 tablespoons of Korean chili paste (gochujang)
- 1 tablespoon of soy sauce
- 1 tablespoon of minced garlic
- 1 teaspoon of Korean chili powder (gochugaru) (optional, for extra spice)

 

Main Ingredients:

- 200g of pork belly or SPAM, sliced thinly
- 150g of sausage, sliced
- 1/2 block of tofu, sliced
- 1 cup of kimchi, chopped
- 1/2 onion, sliced
- 1 cup of mushrooms (shiitake, enoki, or button), sliced
- 1 cup of cabbage, chopped
- 1/2 cup of baked beans
- 1 pack of instant ramen noodles
- 2 slices of American cheese
- 2 green onions, chopped
- 1-2 chili peppers, sliced (optional)

Toppings (optional):
- Rice cakes (tteok)
- Glass noodles (dangmyeon)
- Canned corn

 

Instructions:

1. Prepare the Broth:
   - In a large pot, combine the water (or anchovy stock), soybean paste (doenjang), chili paste (gochujang), soy sauce, minced garlic, and chili powder (if using).
   - Bring the mixture to a boil and let it simmer for about 5-10 minutes.
2. Assemble the Ingredients:
   - In a large shallow pot or skillet, neatly arrange the pork belly (or SPAM), sausages, tofu, kimchi, onion, mushrooms, cabbage, baked beans, and any optional toppings you are using.
   - Pour the prepared broth over the arranged ingredients.
3. Cooking:
   - Place the pot on medium-high heat and bring it to a boil.
   - Once it starts boiling, reduce the heat to medium and let it simmer for about 10-15 minutes, allowing all the flavors to meld together.
4. Add Noodles and Cheese:
   - Add the instant ramen noodles into the stew and cook according to the package instructions (usually 3-4 minutes).
   - Just before serving, place the slices of American cheese on top of the stew and let them melt.
5. Garnish and Serve:
   - Garnish with chopped green onions and sliced chili peppers.
   - Serve the Budae Jjigae hot, straight from the pot. It's best enjoyed with a bowl of steamed rice on the side.

- Adjust the spice level: You can control the heat by adjusting the amount of gochujang and gochugaru.
